Why Won’t My Victoria Sponge Cake Rise?
I have searched and searched and experimented with every recipe and method including by hand, using a mixer, plain flour and baking powder, self raising flour, self raising flour and baking powder, all in one methods, creaming and folding, sandwich tins, normal cake tins, silicone trays, sifting, whisking for lots of air, heating on a hob (swiss role style), not opening the oven, egg by egg, mixing the egg, weighing the eggs etc etc. They still come out flat! Any tips?
Sorry, forgot to add: I always use in date ingredients, always preheat the oven, don’t overbeat the ingredients once their together and have tried a favourite of makes of flour.
